When I work with a USB token plugged into my computer, does the computer's hard drive record data from the token? Does it leave a trace when the USB token is removed?

It all depends on the software one is using. Most applications on the market use temporary files that are stored on the computer's hard drive and are not necessarily systematically deleted at the end of each session. There is therefore a significant chance that traces remain on the hard drive. Thus, depending on the circumstances, one might find: data, entire files, configuration information or significant information in the registry database.

Before selling or giving away my computer, is it possible to erase all the sensitive data?

Yes, you can and should erase your personal data before disposing of a computer.  Imagine selling your PC and letting the buyer have access to your personal data, especially if you used the PC professionally.  To delete your personal information, the first and simplest solution is to reformat your hard disk.  You can also buy specialized off-the-shelf software capable of erasing all your personal data and ensuring that it is undetectable and unrecoverable.
